 Beer Born in the Hill Country

We brew a variety of traditional styles which pay homage to European origins, while highlighting our own Texas Hill Country terroir.  All of our beers are made with water sourced directly from the limestone-filtered water well on the property, 450 feet below the surface in the Middle Trinity aquifer. We don’t alter this water in any way, and let our beers showcase this beautiful, mineral-rich natural resource.  The end product is an elegant and dry beer, made to be enjoyed under the shade of a Live Oak. We’ll have a range of styles, all balanced, approachable, and low abv (mostly!). Crisp and dry on the palate, but at the same time, soft and drinkable.

Vista’s barrel program is built around freshly emptied wine & spirits barrels sourced from our neighbors here in Central Texas. We currently have barrels aging with Brettanomyces ales, Belgian-style lambics (some with local fruit, such as Fredericksburg peaches) and small batch variations of our beer garden recipes.

  • Evensong — Whiskey Barrel Aged Belgian Quad

    This classic Belgian-style quad is full of rich malt flavor and Belgian dark fruit esters. This brew aged in freshly emptied rye whiskey barrels from our neighbors at Still Austin for about six months. The result is a bold, contemplative beer meant for sharing at sunset.

    Expect notes of clove & spice on the nose followed by full-bodied sweet, dark fruit and a touch of toasted oak & rye.

  • Zenith Oenobeer — Oak-Aged Petit Saison

    Collab with True Anomaly Brewing Co

    What began as a simple grisette has evolved into an oenobeer, an ale with delicate fruit notes from time in French oak refermenting with freshly pressed, Texas-grown chenin blanc grape juice from William Chris Vineyards and the True Anomaly house mixed culture.

    Light-bodied, delicate and effervescent, this farmhouse ale evokes flavors such as honey and pear, with a refreshing tartness and a lightly spicy, dry finish.

  • Friendsgiving — Wild Ale with Cranberry, Raspberry & Orange

    What better way to celebrate the holiday season than with Friendsgiving! We teamed up with our Hill Country neighbors to create a beautiful fruited sour aged in local wine barrels — perfect for sharing over a meal with good friends.

    Aged in TX red wine barrels with fruit. Collab with Roughhouse Brewing & Ghost Note Brewing.

    You’ll find cranberry and orange on the nose, with the first sip giving juicy raspberry flavors. The hint of vanilla rounds out this full-bodied ale.

  • Desert Skies Lime — Sotol Barrel Aged Black Pilsner with Lime

    Aged in Desert Door Sotol barrels

    This light and roasty black pilsner is our sixth release in the series of Vista’s house brews aged in Desert Door Texas Sotol Barrels.

    Our crowd favorite Dark Skies is infused with lime zest, evoking a cocktail-like flavor. Time in the sotol barrel lends an earthy note & crisp finish.

  • Fireside 2025 — Whiskey Barrel Aged Imperial Stout

    Aged in Still Austin Straight Bourbon Barrels

    This rich winter brew pours black as night with aromas of cocoa powder, pecan, marshmallow and whiskey. The first sip evokes s’mores, followed full bodied dark chocolate and a whiskey finish.

    We aged this small batch for for over seven months in freshly-dumped Straight Bourbon barrels from Still Austin. The chocolate and roasted malt base marries up with Still Austin’s bourbon made with 100% Texas-grown rye.

  • Shine — Wine Barrel Aged Saison with Fresh Texas Peaches

    This delicious peach brew embodies the Texas Hill Country! It is rose gold tined and medium bodied with subtle peach aroma, notes of lemon and a classic dry saison finish.

    This recipe uses saison yeast, Brett Brux and a touch of lactobacillus, creating a delicate base for fruit. We refermented with over 350 pounds of fresh Texas peaches from Vogel Orchard in Stonewall, Texas and conditioned the beer in Texas red wine barrels. The time in barrel builds balance & complexity, creating a delicious, refreshing, and complex brew.

  • Daydreamer — Barrel Aged Sour Ale with Strawberry

    This delicate ale gets tartness from the bouquet of mixed cultures working in harmony: saison and kviek, plus lactobacillus and two strains of brettanomyces. After six months aging in neutral oak barrels, the addition of strawberries brings a fruity complexity to this wild ale.

  • Desert Skies Paloma — Sotol Barrel Aged Gose with Grapefruit

    This light and crisp gose is our fifth release in the series of Vista’s house brews aged in Desert Door Texas Sotol Barrels.

    This light gose is infused with sea salt, grapefruit and lime zest, evoking a paloma-like flavor. Time in the sotol barrel lends a soft mouthfeel and dry, botanical finish.

  • Rosé Gose — Wine Barrel Aged Gose

    This refreshing gose began with Texas-grown malt, Vista’s aquifer filtered well water and lactobacillus. Brettanomyces bruxellensis and time in the inky red Cinsault barrels from William Chris Vineyards have transformed this gose into a beautiful pink rosé-like beverage, with fruity notes of the wine and soft mouthfeel. The first sip is lemon, followed by strawberry.
