Pairing Dinner: Dine Under the Stars

Join us Thursday, May 18th at Vista Brewing's Driftwood ranch for a Hill Country pairing dinner experience: Spring Under the Stars. Vista's monthly dinner series features upscale farm-to-table menus centered around a new theme each month.

This month, we dine outdoors and have invited our Driftwood neighbors Desert Door Texas Sotol! Meet our friends from Desert Door and learn about the process of making sotol. The Welcome Reception will feature a special cocktail Desert Door and one course of the meal will feature the third in our Desert Skies collaboration brew series, a Golden Ale aged in Desert Door Sotol barrels.

Vista’s Executive Chef Kyle Barker's menu features the freshest spring harvest and sustainably raised proteins. Meet and hear from Chef Kyle, Vista's Brewmaster Daniel Heisler and Co-Founders Kent & Karen Killough.

Share a table with friends — or make new ones — at this family style pairing dinner.

We'll begin the evening at 6:30 p.m. with a welcome drink and bite and gather around farmhouse tables for a family-style meal.

Sample both oak-aged and original Desert Door Sotol and take home a beautiful Desert Door Copita.

Welcome Bite: Salmon Laab Crudo, Songland Farms Baby Tomatoes, Cucumber, Red Onion, Nam Pla Prik, Desert Door Sotol, Lime. Paired With Desert Door Welcome Cocktail Seven Sisters Punch (original and oak-aged Desert Door Sotol, passion fruit, orange,lime, pineapple and cherry)

First Course: Pan Seared Halibut, Songland Farms Melted Leeks and Spring Vegetable Ragout, Vista Foraged Herbs. Paired With Zwickeled Pink - Dry Hopped Pilsner, charitable collaboration with Pink Boots Society

Second Course: Lamb “Anticucho” Mesquite Grilled Niman Ranch Sustainably-Raised Lamb, Charred Leeks, Marble Potatoes, Aji Limon. Paired With Le Saison - Belgian-Style Saison

Dessert: Strawberry Margarita Cheese Cake, Texas Berry Compote, Lime, Desert Door Sotol. Paired With Desert Skies - Sotol Barrel Aged Golden Ale, collaboration with Desert Door Texas Sotol.

  • Menu subject to change based on harvest and product availability.

  • Sorry, no substitutions for beverages. Wine & cider will be available to purchase a la carte from our regular menu.

  • Please plan to arrive for the Welcome Reception between 6:30 – 6:45p.m. Dinner will begin promptly at 7:00 p.m.

  • Rain or Shine: in the event of inclement weather, the dinner will move indoors.
